Two Buck Shuck

I’m not ready for Sunday to be over yet!!! I got so much done today and have had a good day, but the day is coming to an end! I need to find some other things to do to stretch this day even further.

I got everything done I needed to, at least:

  • Last load of laundry is in the dryer right now
  • Wheatberries + salad are made
  • Hard boiled eggs are cooked
  • House is clean!
  • Scones are made  :)

I will say – I “healthed” them up just a bit and they came out a little more like a biscuit than a scone, but they are tasty! Like blueberry biscuits. yum.

I think next time I make some, I’ll go with the  regular recipe to see how different they come out. I like the biscuit-y texture, though. They’re very crumbly like a scone, but softer.

In other food news, Nick and I got to pick our first batch of peas from the garden!

We shucked them this afternoon so I had to come up with something for dinner to use our garden fresh peas.

Luckily, I had made an attempt a while ago to make my own ravioli. I froze them, so I decided tonight was the night we needed to try them.

Let’s just say that I am not the world’s greatest pasta maker :)  The filling was pretty tasty, and I do remember that it was a ricotta/parm filling, but the dough was just too thick for ravioli. It was a tasty dinner, but I need more pasta practice!

I made a sauce by sauteeing the mushrooms with some garlic and olive oil and then added the peas and about a cup of chicken broth. I brought that to a boil, added about a tsp of cornstarch (dissolved in water) and let it thicken. I stirred in 1/2 tsp red pepper flakes and 1 tsp dried thyme, salt and pepper. Then I dropped the ravioli in the pan with the sauce (after cooking them in a different pot), stirred them around in the sauce and added 1 Tbsp heavy cream to finish the sauce.

Our peas were delicious! I’m glad this is just the first batch  :)

I’ve got to pack my lunch and get my stuff ready for work tomorrow, put the sheets on the bed, and watch a little Food Network until my little sister and her husband get here.

    I’ve made my own pasta before, but it was definitely a challenge. Worth it, definitely, but not an activity for a random weeknight!

  5. I have made my own pasta in Home-Ec class during junior high, but surprisingly I haven’t ventured out to make it again–I really didn’t like the taste I guess!

  7. i’ve made my own (as you know, since you picked me as the bsi winner that time!), but rolling out the dough thin enough is the hardest part with ravioli. it has to be almost clear!

    thick dough or not, your ravs look beautiful and delish!

  8. I love making my own pasta, when I have the time, but I let my pasta roller do most of the work for me! This recipe is such a great use of some summertime staples. (Although the peas look like you could eat them by the fistful…veggie candy!)
