Ay Caramba!

Happy end to your humpday! I’m happy the week is halfway over – are you?

It’s rainy and gloomy right now, but it was still nice at lunch time so Nick and I ate outside again today – warm, a little breezy – the perfect picnic weather.

I brought my other bison burger from the other night and had it on a baked sweet potato with lots of salt and ketchup. It was good  :)

I also had a big salad with romaine, tomato, corn, and avocado. I love meals that fill me up but don’t weigh me down, and this is one of them.

We ran over to Walmart at lunch to look for some road tires for Nick’s bike, but were unsuccessful. Then it was back to work to finish the day.

I got hungry at work around 3:30 while sending letters, so I pulled out my snack for today.

Oikos was but 1 get 1 free AGAIN this past weekend, so I bought 6 – 4 for me, 2 for Nick. I wish they were always on sale – I just can’t afford to pay $2 for one yogurt container, but this and Fage are the only greek yogurt I can get here and Fage is never on sale.

I topped my yogurt with some of Nick’s granola from MixMyGranola– his has the lowfat granola, dried blueberries, sunflower seeds, and mini chocolate chips. He picked a good mix – I liked it a lot with the yogurt.

We both had chiropractor appointments after work, and my back/neck is actually in pretty good shape. I only needed an adjustment in one spot in my back so I guess everything is staying in place after the accident, which is great. She usually always has to adjust something in my neck, but not tonight!

Then….dinner plans changed. We were planning on going to get cracked + eat leftovers and tart at home. But then…

Our chiropractor told us that the new Mexican place in town opened up tonight, so we had to go try it out. Of course, I had taken my camera out of my purse at home since I thought we were just going to see her and then come home – so…no pictures, but it was really good! Lo siento amigos! Next time  :)

Nick and I both got their carne asada tacos with fresh salsa, hot sauce, and cilantro. I don’t know what it is about fresh tacos, but I love, love, love corn tortillas for my tacos. I don’t know how they get them to not break or rip apart! Anytime I use any at home, they just don’t stay together well enough to actually make tacos, but these were perfect. I’m sure we’ll be back! It’s also a good thing I ate that big salad at lunch because I had no veggies with dinner and it was fabulous anyways.

Now, I’m about to dig into this:

Are you excited for Top Chef Masters tonight? I hope I can stay awake long enough to watch it – we don’t have one of those fancy DVR things   :)

Do you eat the potato skin? I love it – especially on sweet potatoes and roasted/grilled potatoes. So crispy and good.

  4. Yes!!! You better stay up and watch it! I can’t wait! I was a top chef addict and I was getting so impatient about the new season coming up. I hope you stay up for it…if not I’ll tell you all about it!

    I love the skin of potatoes. Thats my fav part and usually ill scoop some of the insides, load it with broccoli and cheese, then eat it up!

  5. I love the potato skin on sweet potatoes! I dont remember the last time I had regular potatoes, but I think I prefer the skin on sweet potatoes thanks to all the flavor.

    Honestly, that chocolate business looks so phenomenal!

  6. I was so excited to see Oikos buy one get one free this week too! So expensive, but I need a little Greek yogurt in my life every once in awhile.

    I LOVE the potato skins, and if I’m ever eating white potatoes I always eat the skin, gotta get that yummy fiber! :)

  7. I totally eat the potato skin! It’s so good. That dessert looks amazing and I love the granola topping on the yogurt!

  8. i hear the potato skin is where the most minerals/vitamins are…..or so my dad tells me. maybe that was just a trick to get me to eat the skins?

  12. all those pictures are making me hungry! i never thought of eating a burger on a sweet potato, but it looks tasty. i always eat the skin too, its the best part –i also eat the crusts of bread, and my favorite part is the end slice thats all crust :)

  13. I have the same prob with my corn tortillas. I made enchiladas earlier this week, and they ended up being a big mess….a tasty mess, though. I’m going to try my hand at making my own and see if that changes it. And yay for the potato skin…that’s where a lot of the nutrients are!!

  14. Ohhhh… the skin is the BEST part! It’s especially yummy when you make oven fries and it gets all crispy and slightly burnt… errr… “caramelized” as the chefs say! hahaha

  15. Ahh I eat my sweet potato with tons of ketchup too! I though I was the only one—silly me :-) And yes I do eat the whole thing, skin included.
