River Rats

We had such a fun day! This is going to be a doozy, so I’ll try to mostly just post pictures  :)

My little sister and her husband stayed with us last night on their way to Memphis for a summer school class, so I had other breakfast buddies this morning.

I left my sis and her husband and went to church. Nick and I ended up going out to eat for lunch with some people from church, and we had a really good time.

I got a cobb salad for lunch – yup, more avocado  :)

We headed home around 2:30 and immediately changed into our bathing suits so we could try out the kayak!

The river is a little muddy because of all the rain we’ve been getting, but the weather today was just beautiful. We paddled up river for a while and then just let ourselves float back to the ramp.

I promise I’m not naked, floating down the river! My bathing suit can be worn strapless, so I didn’t have the strap up – but the picture does look funny! The kayak is awesome – it will be so much fun just go out on the river whenever we want.

After being on the river for about 2 hours, we loaded up the kayak and went back home. I took a quick shower and headed to the grocery store for a few last things.

3 loads of laundry, bathroom cleaning and dusting, and making a special birthday dessert for Nick tomorrow filled up the rest of the afternoon evening. Nick cut the grass and helped clean the house while I was making dinner. We didn’t end up eating until 9! We didn’t get back from the river until around 5, so everything was a bit later than normal.

I made a chicken/shrimp stir fry for dinner –

  • 1 bag coleslaw mix
  • 1 bag frozen mixed veggies
  • 1/2 lb. shrimp, peeled and deveined (I used frozen that I thawed while doing laundry/cleaning up)
  • 1/2 cup or so leftover chicken, cooked and cut into bite sized pieces
  • 1 tsp sesame oil
  • 2 Tbsp teryaki sauce
  • 2 – 3 Tbsp soy sauce
  • 1 Tbsp pb2
  • 1 tsp hot chile garlic paste
  • garlic powder
  • powdered ginger
  • scallions

I just heated up the sesame oil and added the bag of coleslaw. Once that had wilted down a bit, I added the bag of frozen veggies and let those cook together until the frozen veggies had thawed/heated through.

Then I added the soy sauce, teryaki sauce mixed with pb2, and seasonings. Mix all the veggies/seasonings together.

Scoot veggies to one side of the pan and add in the shrimp. Let shrimp cook on one side, flip over and also add chicken to heat through.

Sprinkle in scallions and serve once shrimp is cooked through.

We had ours over some brown rice and some edamame.

I am worn out after this weekend! We had a lot of fun, a lot of sun, and I am ready for a good night’s sleep to start the week off right.
