Dinner Solved

All of your dinners sound great! I have some great ideas for dinners coming up after seeing your answers – too bad I didn’t have some stuff I needed to make some of your dishes!

I guess my lunch held me over better than I thought it would – maybe it was all the cheese or those chocolate covered strawberries, but either way, I never got hungry this afternoon to have my green monster. I’m planning on having it tonight with some fun additions – if it’s good, I’ll post it in the morning.

It rained pretty hard this afternoon, but wasn’t when we got home so we hurried outside for a quick/short run. We ran a little over 2 miles today and it was a good one. I felt good, I felt fast, I had no cramps. Sweet! I can’t believe the race is only 2 days away!

While trying to think of dinner ideas, I randomly remembered that we had some tilapia in the freezer. Out of nowhere, I decided I wanted fish sticks. Honestly – I haven’t had fish sticks in years. I’m not really sure why those popped in my mind, but that’s what we had.

Unfried Fish Sticks

  • 1 lb. tilapia, cut into small pieces
  • 1/4 cup or so cornmeal
  • 2 Tbsp soy parmesan
  • 1 tsp garlic powder
  • 1 tsp blackened seasoning
  • 2 egg whites
  • 1-2 Tbsp milk
  1. Cut fish into pieces, however big or small you want.
  2. Heat oven to 425 and line baking sheet with foil. Spray foil with cooking spray.
  3. Mix milk and egg whites in one dish.
  4. Mix cornmeal, parm and spices in another dish.
  5. Dip fish pieces in milk/egg mixture, then in cornmeal mixture and lay on baking sheet.
  6. Bake 5 minutes, flip over, and bake another 4-5 minutes until flaky.

These turned out great! And definitely healthier than frozen fish sticks.

We had ours with some fresh corn on the cob and roasted zucchini/yellow squash. For the squash, I just sliced into half rounds, laid on another foil-lined baking sheet, seasoned with salt, pepper and garlic powder and roasted about 15 minutes total, flipping halfway through. Just put the veggies in while you’re dipping the fish and everything will be ready at the same time.

This was really good – light, but filling.

I’ve got some serious cuddling to do with the big cat lying beside me on the couch, right after I pack my lunch for tomorrow.

  8. That squash has just struck a craving!! It looks fantastic! Fish sticks remind me of childhood – I wish I could find a vegetarian form of it then I’d be all set ;)
