Indoor Cookout

Man, I’m running late today! And I’m finally using Windows Live Writer, which I just downloaded so we’ll see how long this takes me tonight  :) Do you use LiveWriter? Like it? Hate it? It is strange at first…

Although work today went pretty well, I’m a little sad that it’s not later in the week already – I kept thinking today was Wednesday and I kept being disappointed by the calendar.

Since the next couple of days are supposed to be rainy here again, Nick and I planned on going running after work just to make sure we could at least get one more run in before our race this weekend. I didn’t want to have weird stomach stuff again, so I packed a tried and true snack to have this afternoon:

Double yum. I found Oikos this weekend BIGI Free! I bought a few plain ones for myself and a blueberry one for Nick to try. He liked it! I hope not too much since we can’t afford these every week. I forgot how much I like Oikos – so creamy. I’ve also figured out that I need something sweet with yogurt, not tart. I tried the orange cranberry gnu bar on some yogurt, and it was just too much tartness. But this? This was perfect. It was gone too fast.

After we left work, we had to put gas in the truck and pick up part of Nick’s mom’s birthday present, so we got home later than normal. By the time we got home, neither one of us wanted to run but we went anyways. Just one of our normal routes, a little over 3 miles, and it was much better than yesterday! No stomach weirdness, no cramps or side stitches. I hate running later, but at least it had cooled off a bit!

Needless to say, dinner was much later than normal since everything else was, but it was awesome.

I made my first try at homemade black bean burgers a few months ago -they were okay – they didn’t stay together very well, though.  I looked through a bunch of recipes today and made a mix of my own for tonight.

Black Bean Burgers Remix

  • 2 cans black beans, rinsed and drained
  • 1/4 cup cornmeal
  • 2 egg whites
  • 1 scallion, chopped
  • 2 Tbsp red onion, chopped
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp cayenne
  • 1 tsp garlic powder

Mash beans with cornmeal until most beans are smooshed. Stir in seasonings, onion, scallion, and egg whites.

Heat pan over medium heat and add oil or spray. Form into 6 patties and cook about 6-8 minutes on each side. I just let them cook on the first side until they were firm enough for me to actually flip them.

Nicole was nice enough to send me some links on how to make the perfect burger, creative burger toppings, and refreshing summer wines under $12! Make sure to check these out – all their tips are great.

I looked through their article on 12 Burger Toppings and let the suggestions create my burger for me tonight.

If you can’t tell, I am lovIN the avocado a lot lately. They’ve been on super sale, so I can’t resist.

I ate my bean burger (which is awesome!) open faced on half a whole wheat bun and layered it like so:

  • toasted bun half
  • sliced avocado
  • bean burger
  • heated queso cheese – yum! spicy and good on this.
  • sliced tomato

We also had some steamed broccoli and sweet potato fries.

 

Well, I think I like LiveWriter! We’ll see how it goes the next couple of days since I’m sure it will take me a while to get used to it.

 

Any tips if you use LiveWriter? things I should know?

  2. I love LiveWriter! It makes posting so much faster, and it’s pretty simple to figure out I think!

    Mmm I agree about yogurt, I love it plain, with just a little something sweet added to it :)

  3. I LOVE live writer! when I switched to a mac, I got a virtual computer downloaded into my mac JUST so I can use live writer.
    you’ll love it.
    the greatest thing is that you can “save” a link to certain terms you use a lot. and the pics just uploads like a snap! aaand you can use it offline, which is awesome too!
    ooh…queso cheese? never tried it, but I always see it! how does it taste like?

  4. i use live writer and love it more than blogger. it sometimes crashes on me though so i have to try publishing it twice. that’s my only complaint!

    and love the zbar w/ oikos. if only yogurt didn’t hurt my bell-eee…

  5. I LOVE zbars! The chocolate brownie one is my favorite, but the blueberry one is a close second. Have you tried the Gnu bars? They have a chocolate one that I really like. Very different than the Zbars, but still yummy.

    Oh, and I found the dark chocolate pb cups – OMG – so good!

  6. I’ve tried live writer, but I have problems uploading a post with pictures! I always got errors. It was much easier to compose a post, though! I also love the “save” feature.

    The black bean burgers look great! The avocado and queso cheese toppings sound delicious.

  11. Live Writer is a godsend. Nothing compares when you get a Mac – which I am regularly sad about…

    I don’t know if I have any tips at the moment? I still haven’t figured how to do tags and categories on there, and it’s one thing I should learn. Let me know if you figure it out!

  12. I love Windows Live Writer. I’ve been using it most of the time I’ve been blogging and it is so much more user friendly than Blogger was! Great blog and your oaty bars that were posted on Zesty today look de-lish. I love stuff like that!
