Last Chance Baking

It is pouring outside! The rain held off for most of the day, but it is coming down now. I’m a little tired of the rain, but I do like the sound of it.

Today felt so much like a Monday to me – this week is going to be weird again, and I’m probably going to have all of my days confused again. Oh well – it should be a good week, no matter what day I think it is  :)

Lunch today was mostly leftovers and I actually wanted it when lunch time came around!

I had a veggie burger

Some of my “baked” beans from last night

and the last of my broccoli salad

Our office went out for smoothies at Elderberry’s to celebrate one of my co-workers’ birthdays, but I didn’t get anything! My stomach was being strange and none of their smoothies sounded good today -I know, what’s wrong with me? I can’t believe I didn’t get one.

After we got back and I started back on work, I got a little hungry right before we went home, so I ate some cantaloupe and pineapple.

I wasn’t sure if we were going to be able to run after work, but I didn’t want to go on a hungry stomach. Of course, the entire ride home from work it was raining! But, it cleared up a few minutes after we got home  :)  I’m so glad we got to run today – I need to make sure we get in a few runs this week and next week since we have a race on Saturday.

that’s right – Nick and I signed up for our first ever 10K AND it’s a trail run!  I’m so excited about it. That will be the longest I’ve ever run so far, and I can’t wait to see what it’s like to run a trail run around here.

The only bad thing about the run this afternoon was I got attacked by a small dog down our road when I was coming back home! There’s a few small dogs across the corner from us, but they’re usually in their fenced in yard. Today, their owner was outside doing some stuff to his truck and 2 of their smaller dogs were out. I was running home and they both were barking and circling me (which is pretty normal), but then one of them jumped up on my leg and nipped at me! I have a nice little bruise/welt from his claws/little bite. The guy didn’t even apologize! If they’re out again, I’m going to say something to him, but they’re usually in their yard so I’m hoping they stay there.

Dinner tonight was easy since we have so much of that ziti leftover! I made a salad with romaine + red onion + tomato + balsamic + olive oil + salt + pepper

and I had a serving of the baked ziti from the other night

I just finished baking my 3rd trial batch of cookies for the cookie contest, and I think we have the winner! This last batch had a few changes from the last, and I think this recipe I made tonight is the one – I have to have it sent in by 6/1 and I’m glad I was able to try out a few tweaked recipes to see which one worked best. I’m excited!

I promise to post the recipe as soon as I can – I know I’m sending this in for this cookie contest, so I’m not sure when I’ll be able to post the recipe, but it will be on here.

I’m off to put these cookies away and finish my book! See you for a new breakfast  :)

What’s your favorite pasta mix-in?

  7. I was walking down the street the other day (Park Slope) and the same thing happened to me! The dog left a huge mark on my leg and the owner was like “oh.”

My favorite pasta mix in is ground turkey or pine nuts.

  8. I love baked ziti so much! Your eats look delish!

  9. That salad looks incredibly scrumptious! Kudos to you on the photography. We have a problem with loose tiny dogs in our neighborhood too…hubby and I went for a walk a couple of weeks ago and this chihuahua followed us barking for almost a quarter mile. I even talked sweetly to it (we have lots of loose dogs in our neighborhood, so I try to make friends with all of them). These people are really bad about letting that tiny dog run loose; I’m always afraid that he’s going to get run over one day. I’m glad he didn’t break the skin on you, though! Have a good humpday!

  10. Hi Brandimuffin! All of your food looks delicious :) I love baked ziti, but I think my favorite for pasta has to be bolognese sauce!

  11. I made your baked ziti that you shared from Food Network–it was beyond good! Thanks again for sharing =) I can tell why your eating leftovers..it almost seems like it gets better after sitting for awhile!

  12. Congrats on signing up for the 10K!! Good luck training! Good luck with your cookies – I bet they’re delicious!

  13. That race sounds like such a great and fun challenge. Good for you for signing up!!

I can’t believe you got nipped by a dog, and didn’t even get an apology from the owner. That is not ok. I’m glad you are alright!
