Oops!

Okay, so I guess I lied about the normal blogging schedule returning today  :)  I thought for sure we would eat breakfast at home and I would blog after – when that didn’t happen, I knew today would just be totally fun and off schedule, and it was.

Nick and I woke up around 7:30, layed around and watched a little Today Show to see the weather, then took showers and drove to Blacksburg for breakfast. We really wanted to go to this great greasy diner place for breakfast but they were closed! So, we walked around the corner went to Gillie’s, which is this great vegetarian place, since they also have awesome breakfasts.

I went away from my normal choice and ordered their Spanish Frittata, which was eggs topped with tomatoes, black olives, artichokes, spinach, potatoes, feta and a little cheddar with some balsamic vinaigrette on the side.

This was so good and light and very different than the frittatas I’ve made and had before – nothing was actually in the eggs-  it was just a thin layer of eggs on the bottom and all the veggies/cheese completely on top of the eggs. I loved all the veggies and flavors going on in this dish.

Colorful plate + 2 cups of coffee is a good way to start your day.

After breakfast, we went over to the mall for a little while for Nick to look for some dress shoes – and this is the bad thing about living in a kind of small town. There aren’t many stores here and really not many choices for nice dressy shoes for him. I think we found a few possible options, but we’re just not sure yet.

We were trying to decide whether to go hiking today or not since it was really cloudy and overcast today. It just looked like it was about to pour all day here. After we got home, and while we were deciding, we ate some leftovers to clear some room in the fridge.

I had a serving of the pork/veggie/rice stirfy from the other night, plus the last of the grilled zucchini/squash from our cookout on Friday.

It looked a little better outside once we ate, so we changed clothes and headed out to hike. That is one thing I love about where we live – we have a bunch of places within 10-15 minutes of our house to hike, and I love being that close to so many amazing views.

There were tons of people at the falls today! We got to the parking lot at the end of the trail and couldn’t even find a spot – we debated going back home, but we really wanted to be able to do something outside today and enjoy our day off so we parked along the road and started up the trail.

It still amazes me that this is 10 minutes from my house (not including hiking time)  :)

We also saw this crazy mushroom growing out of a tree trunk – it was pretty neat.

After 2 hours of hiking and watching the waterfalls, we got home and started on dinner. Of course, as soon as we got home, it started raining – BUT, it stopped long enough for Nick to be able to grill our burgers.

Nick grilled us some lean burgers and the romaine for salads. Add on some whole wheat buns and “baked” beans, and that’s a great cookout meal. For the baked beans, I just took a can of vegetarian baked beans and added:

  • 1 can northern beans, drained/rinsed
  • garlic salt
  • onions, chopped
  • mustard
  • apple cider vinegar
  • Worchestershire sauce
  • pepper

  4. That waterfall is gorgeous! I love hiking, it’s so much fun. My family took a trip to the Smokey Mountains last year, and it was so beautiful! Oh, and the frittata looks delicious :)

  7. We had to drive all the way to Fayetteville (1 hour) yesterday to buy shoes for Brandon too! Arkansas shopping is not so good….

    Having some of nature’s best in your backyard does kinda make up for it though:)
