I Give You My Dinner

Happy weekend and almost Memorial Day! I hope everyone is having a great weekend. I got home today around 3:30 from my girls night, and we had so much fun.

It was much needed and the three of us talked for like 14 hours, nonstop. We didn’t go to bed until 2 am this morning and, for some reason, I woke up at 6 am so I am beat. I took a nap with Nick when I got home, but I have a feeling I am going to sleep well tonight  :)

We caught up on everything – I hadn’t seen these two girls together like this in 5 years so it was time. And even though all these years have passed, it’s like we saw each other yesterday once we’re together again – just like old times. I love that.

I took no pictures this weekend, and I enjoyed it – it felt weird to be eating and not taking pictures, but we just had so, so much fun and I didn’t want to miss a minute of it.

I came home today, unpacked, took a nap and then made dinner which I will post because it was great!

ziti

When I was home with Roxy earlier this week, I was watching food network and saw the Neely’s make this really different baked ziti – I had never seen a recipe for ziti that had more than pasta + meat sauce + cheese.

Neely’s Baked Ziti

I made a few changes based on what I had and it was great!

  • lean ground beef instead of sausage
  • whole wheat pasta
  • only 1 cup of ricotta
  • fresh basil instead of the pesto since I didn’t have any

Nick and I had both had seconds, so I know it was good  :)  You should try this if you haven’t!

  3. That’s totally fine about not taking pictures. I don’t take pictures of every single thing I eat– not even every meal, if I’m somewhere or it’s not very convenient.

    I’m glad you had such a good time with the girls! I love it when you can meet up with old friends and feel completely natural and at ease, like time hasn’t passed at all :D

  7. I love girls nights like that! I saw friends from fifth grade over the weekend and it felt like nothing had changed :-)
