Just Bust a Move

I ran today, I ran today!!! Can you tell how excited I am?

Oh, it was glorious! I was feeling pretty good today – no real aches and pains (other than the headaches coming and going), so I planned on having an afternoon snack just in case we got to go.

I ate some cantaloupe and pineapple this afternoon at work – I really like cantaloupe, but I only really like eating it with other sweeter/more tart fruits like berries or pineapple. I like the combination. That’s my nice way of saying you’ll see this a lot  :)

So….work was finally over and I was feeling good when we got home. I didn’t really have a headache and the weather was just perfect today. So we went. I was pretty slow at first and my legs were pretty tight from not doing much the past week, but it felt so good to be outside, to get my heart rate up, and to just go. Nick ran with me until we hit mile 2, then he went ahead (since he’s much faster than me) and I finished about 3 miles in a little over 30 minutes. Ah….I feel so much better from being able to move and stretch and breathe and enjoy being outside.

whew! My knee didn’t hurt at all! I was wondering if it would after being smacked into the dashboard in my accident Saturday, but nothin’! It hurts if I touch the bruise but it doesn’t hurt to move/bend my knee, thank goodness.

Since we went running and I had a special baking project planned for tonight, dinner needed to be quick!

I had some pork loin slices  in the freezer that we grilled a few weeks ago, so I thawed those while we were running. When we got back + showered, I started on this stirfry? Fried rice without the egg? I’m not sure what to call it except GOOD!

  • 1 lb. bag frozen mixed veggies
  • leftover protein of your choice, cut into bite sized pieces
  • 2 scallions, chopped
  • 1″ piece fresh ginger, chopped
  • splash soy and teryaki sauce
  • hot chile garlic paste
  • brown rice, cooked

For tonight, I cooked 1.5 cups instant brown rice in 1.5 cups water for 5-10 minutes until cooked.

While the rice is cooking, heat a pan with a little canola and a few drops of sesame oil and add the bag of frozen veggies. Once those are thawed/heated through, add the ginger and scallions. Cook until fragrant. Add in pork (or other protein), rice, soy, teryaki and hot chile garlic paste. Stir and cook until heated through. Serve!

I can’t unveil my baking project yet since it’s the second try at my cookie contest recipe, but I can tell you that Nick said “These are it! Send them in”. :)  I’m happy they turned out well! I’ve got to clean up my baking mess.

    I looooove fruit, so it’s really hard for me to pick a favorite. Right now, I’m going to have to go with watermellon, though!

    My favorite would be a toss up between mango and pineapple. I also adore cherries and bananas.
