Today is beautiful! I’m not sure what happened, but I wish I could just be outside all day today and enjoy the weather since I think it’s supposed to rain here again tomorrow. The sky is blue, the grass is green, and there is a cool breeze to go along with the warm sunshine. I think I’ll get to run today!
Work has gone well this morning – for some reason, I keep thinking it’s Monday. I guess since yesterday didn’t start out like a normal Monday, I have my days all confused. I keep putting the wrong date down and looking at yesterday on the calendar.
Since we didn’t make coffee at home today, I had some of my Numi breakfast blend tea with a splash of skim milk this morning at work.
It was good with the milk. I don’t usually add milk to my tea, but I really liked it in this.
Lunch was something I was very excited about:
1. I got to use up some great leftovers, and
2. I had TONS of veggies! My tummy is very happy.
I love all the colors!
You can’t really tell how big this was from this picture so I took a side shot of the container, too.
This is one of those massive 7 cup gladware containers and I ate every bite :) It was mostly greens, though, so it didn’t make me too full.
- 2 cups spinach
- 1 cup mixed local greens
- 1/4 cup taco meat
- 1/4-1/2 cup fat free refried beans
- 1/3 cup corn
- 1 diced roma tomato
- 2 spoonfulls of the leftover guacamole
I topped the greens/spinach with the beans/corn/meat mixture that I heated up in the microwave and then put the tomato/guacamole on top of that. I. love. taco. salads. I really think I could eat them every day.
I also had an apple with my lunch
Nick and I ran over to Barnes and Noble at lunch so I could pick up 2 new books I want to read and somehow I ended up with this?
Today was so nice and an icy blended coffee sounded so good. Having those starbucks in B&N is so tempting! I got a grande mocha light frap, blended twice. I hate when you get to the bottom of the frap and it’s all just big chunks of ice – if you ask them to blend it twice, you don’t have any of that. I have to thank my WW friend Penny for that tip.
Back to work for me – I’m hoping this weather holds up for a run this afternoon!
Do you “milk” your tea or coffee? Or do you add anything?

I love milk in my chai tea and coffee, but stay away from the milk in my flavored teas!
I add splenda and real sugar to my tea! Ironically I just popped over to Sbucks during work to get some tea and take a walk and enjoy this beautiful Virginia weather we are having!!
Have a great run! I’m so jealous! I have to teach 4 hours of dance indoors after work. I would loooooove to be outside today!
I add 1 T of Silk French Vanilla Creamer to my morning cup.
