Dragging

Well, we made it back safely but I have a feeling I’m going to be dragging for a couple of days.  

Today was rough. I need a lot of sleep, lots of veggies, and lots of water.

Our trip was really good, but too long and too short at the same time – it went by really fast, but it was a lot of time in the car. I think over the 72 hours we were gone, we were in the car for about 40 of them? I feel like I haven’t moved at all!

I’m working on some recap posts, but I have yet to go through all of my pictures from this weekend so I’ll get them up sometime this week.

My older sister, little sister and her husband stayed with us last night when we got back into town and then we met my mom, dad and grandmother for breakfast this morning before they headed home on another 6 hour trip today. We went to Denny’s since it was right off the interstate and I got a veggie omelet and grits with some coffee. I had my camera with me, but I guess I forgot to take pictures?

We got into work around 10 so I caught up on all the emails and submissions I missed on Friday and this morning and got to my normal Monday tasks.

Nick and I had to go out for lunch today since we didn’t have any food in the house and I hope we don’t go out anymore for a while! I am so ready to make food at home. We did go to a really good place here called Elderberry’s that has wraps  and smoothies.

I got the spicy hummus wrap: hummus, roasted red pepper, lettuce, tomato, mushrooms, crushed red peppers – all grilled in a wheat tortilla

I also had a small bag of Pirate Booty – this stuff is so light and airy! I like it, but I think I should always have it in these single serving bags  :)

This afternoon was tough. I am totally exhausted from the trip, my stomach has been off all weekend, and it didn’t help that the weather was just nasty, rainy, and cold most of today. I had a hard time concentrating at work this afternoon and was just so tired. Although I wanted to just come straight home after work, we had a chiropractor appointment and we needed to go get groceries. I am glad we already had appointments to see the chiropractor – my neck and back feel so much better now. After being cracked, we picked up some groceries for this week and came home. Nick went outside to cut the grass before it started raining (again!) and I started on dinner and some laundry.

I had planned on having one meal tonight but the store didn’t have an ingredient I needed, so the easy dinner plans got changed. I’ve had a box of the Annie’s mac’n’cheese in the cabinet for a while and decided tonight was the night I needed something super easy.

I used some whole wheat mini shell noodles I had at my house instead of the noodles in the box and added some protein + veggies to round out the meal.

While the pasta was cooking, I roasted some broccoli in the oven. I also added a bag of  frozen mixed veggies (corn, carrots, peas) to the pasta pot when it was almost done, then stirred in some lean diced ham. I topped mine with some diced tomato, too.

I could not get enough veggies tonight! I just wanted a big bowl of them, so that’s basically what I had.

It honestly took just about all I had just to roast the broccoli, boil the water and mix all this together. I’m hoping that tonight will be a good night of sleep. I haven’t slept well the past 3 nights because I was so worried about getting up on time for all our days of traveling.

A good omen for this week? I hope so.

What was the best part of your weekend?

I had a few:

  • Seeing my little sister graduate
  • Being able to spend time with my family
  • Being able to see one of my best friends and her mom, even if it was only for an hour!
