I am so glad I have tomorrow off, because I totally feel like it’s Friday :)
The lunch today turned out really nice – the speaker went over the main ways to prevent heart disease: diet, activity, and knowing your numbers! Sound familiar?
The food spread was actually quite impressive – this is my kind of food! There were a few salad choices, raw veggies and dip and peanut butter, hummus/pita, chicken salad, whole wheat pitas, lots of fruit salads, chocolate covered strawberries!!!, pudding pie, etc.
All our work lunches should be done “heart healthy”! Everything was great.
I got some pretty good pictures of the table, but I didn’t take a picture of my actual plate. I had some of my couscous dish, some whole wheat veggie pasta salad, a couple baked chips and salsa, corn salad, raw broccoli, a bunch of mixed fruit, and 2 of those chocolate covered strawberries you see above :) Plus one of the crumb bars on the bottom right and a small bite of a healthy blondie. It was such a great tribute to our friend and coworker, and I felt great about everything I was eating.
I packed a green smoothie for this afternoon since I wasn’t sure what they would have to eat, and I’m glad I did! I got pretty hungry around 3 pm, so I dove into this beauty
This one was:
- 1 cup milk
- 1 ripe banana
- 2 tsp PB2
- 2-3 cups spinach
We left work and headed home to get ready for my parents and sister, including making the guest futon (fancy, huh), air matress, and clean sheets. Between that and the rooster wake up calls, I don’t know why anyone would want to stay anywhere else! :)
I made one of our favorite meals tonight – Tacos! I guess cinco de mayo is continuing in our casa.
- fat free refried beans
- ground beef/turkey mixture
- red onion
- black olives
- little bit of leftover spanish rice
I gotta finish watching The Office! We’re leaving super early in the morning to get on the road – I’ll try to blog breakfast, but we’ll see if that happens :) Blogging may be a bit sporadic this weekend since I’m not sure what our internet situation will be most of the trip.
