On The Road Again

Happy Friday and first day of May! I can’t believe April is already over – it seems like this year is flying by!

Thanks for all your comments on my post last night. It’s nice to know that there are other people going through this same thing about this time, or some of you that have been through it already! I guess it’s just a part of life everyone goes through at some point.

This morning has been nice and relaxing – we’re about to get on the road and head to Nick’s parents for the weekend for their huge neighborhood yard sale – I will try my best to get some pictures tomorrow of how crazy it is!

No alarm clocks set this morning, no rush…it was nice. Nick suggested a dutch baby pancake for breakfast this morning, so I looked up the recipe last night so we could make this puffy wonder. If you have never made one of these, you should. I had never had one until Nick’s dad made one at their house.

Nick’s dad usually puts canned peaches or apricots in his, but we didn’t have either so I just cut up the rest of our fresh strawberries and used them instead. It was really good with the strawberries!

The recipe is super easy, but you do need a deeper cast iron pan or oven proof pan because it puffs up so much. We actually had a strawberry go overboard during the baking process – by the time we saw her, it was too late to save her. The oven is a cruel, cruel thing.  

We used the recipe found here and made the 2-4 serving recipe, cut the butter to an even 2 Tbsp and added the fresh strawberries before we poured the batter in the pan.

Yes, the pancake does deflate a bit once it’s out of the oven and cut, but it is so good and light. It would probably be good with any fruit you put in there. The batter is super easy to make and it only takes about 20 minutes to bake.

We also cooked up some bacon, and Nick and I split a banana for a little more fruit action.

Of course, coffee was also in the mix – we used our new Mill Mountain blend from a coffee shop here.

I’m off to finish my coffee, watch a little more No Doubt on The Today Show (!!!) and get ready to get out of here.

I love real maple syrup, but one of my favorite pancake toppings is an over easy egg. Strange? Maybe. But check it out.

  4. There’s a fruit syrup from Cooking Light that my family adores. It has raspberries, blueberries, a small amount of maple syrup, and….something else I can’t remember. It’s fabulous.

  5. I LOVE dutch baby pancakes! My boyfriend and I used to get them in his hometown pancake shop. I thought they would be to difficult to make myself, but the recipe appears pretty simple. Thanks for the idea! :)

    my favorite pancake topping is whatever i have in my possession. fruit or nut butter or yogurt or WHIPPED CREAM AND CHOCOLATE SAUCE (but i usually don’t have that in my possession, haha)

  7. OMG, I am a garage sale whore – jealous of your mega sale tomorrow!

    My husband seriously knows me – if we are driving and he sees a garage sale sign, he automatically pulls over!

    Bfast looks delicious – I like simple toppings – just sugar free Smucker’s pancake syrup – its the best sf one out there, and believe me, I’ve tried them all!

  8. Oh my goodness!!! A German pancake, or that’s what my hubby calls them! That is his all time favorite breakfast food and the only recipe I have ever seen him make….Last year for Christmas I bought him a special pan to make those pancakes and he loved it. Oooh, I know what we are having Sunday morning!!!
