Brandi's Cookie Bars

I really wanted to make up for my baking project that didn’t work out well a couple weeks ago, so I came up with this and was hoping for the best. I’m all about changing regular meal recipes, but I’m still a bit apprehensive about making up my own “baked goods” since you have to have some sort of balance between the ingredients you use for it to come out okay.

These totally made up for my bad batch!

Brandi’s Cookie Bars

  • 2 cups oats (I used 1.5 cups quick oats, .5 cup old fashioned)
  • 3/4 cup wheat bran
  • 1/2 cup brown sugar
  • 1/2 cup unsweetened applesauce
  • 2 eggs
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/4 cup chocolate chips
  • 1/4 cup butterscotch chips

Mix oats, wheat bran, sugar, salt, and cinnamon. Add in applesauce and eggs. Fold in chips.

Bake at 350 for 25-30 minutes.

Then, hurry up and get one if there’s anyone else in the house  :)

I honestly thing I would eat just about anything that has chocolate and butterscotch chips in it.

I’m pretty sure Nick liked them, too; he ate 3 the night I made them!

These look wonderful. I always struggle with coming up with my own baking recipes. How do you know how much to mix and that sort of thing? Just trial by error?

I have lots of oats and wheat bran hanging around in my pantry. I was hoping to come across something creative to make with them. These look so gooey and delicious. Thanks so much for this recipe!!
