Camera-less

Well, it had to happen at some point. I left my camera at work! Of course, I didn’t notice until we got home and neither one of us was about to turn around and drive 30 minutes back. Good thing we have more than 1!

This afternoon went by so slowly at work. Usually Mondays are pretty busy and hectic for me, but I got all of my work done earlier than normal and worked on some other projects today. I’m glad I got some other stuff done, but it was very strange for a Monday.

Since it’s been raining most of the day, I assumed we wouldn’t be raining when we got home and I was right. I’m hoping it will be clear enough for a run tomorrow when we get home  – the rest of this week is going to be busy but fun  :) 

Dinner tonight started as one idea and ended up being something very different – I love when that happens!

My original plan was to make Robin Miller’s Chicken with Artichoke Pesto, but with pork instead.

I used the artichokes and the basil, but the rest of it changed!

Artichoke Stuffed Pork Loin

  • 1.5 lb pork loin, sliced into 1″ thick pieces
  • 1 can artichokes hearts, chopped
  • 2 Tbsp fresh basil
  • 1 tsp crushed red pepper
  • 1 tsp garlic powder
  • 1-2 Tbsp soy parmesan
  • oregano
  1. Slice a 2″ slit into the side of each pork chop
  2. Mix the chopped artichokes with the basil, garlic powder, basil, crushed red pepper, and soy parmesan.
  3. Stuff artichoke mixture into pork.
  4. Sprinkle outside of pork with salt, pepper, and oregano.
  5. Bake at 400 for 25 minutes.

Check out that stuffing! I think I used more crushed red pepper than I thought – some bites were really spicy!

We had ours with steamed broccoli topped with roasted garlic seasoning and a brown rice/barley pilaf.

I’m going to catch up on How I Met Your Mother before the new one comes on!

    Just catching up and had to answer a couple of your questions! Most decadent meal was at the Polynesian resort in Disney Word… coconut banana pancakes. WOWZA. My favorite dessert? Well… if belly didn’t hurt, it might be a big hunk of cake from the bakery that made all my birthday cakes growing up AND my wedding cake. It is sooo yummy. I swear heaven will smell like that! AND… a tall ice cold glass of milk to go with. mmmm.
