Easy Dinner, Busy Day

After waking up in eastern Virginia and driving to western Virginia, I’m tired! We had a great day overall, though – probably not a typical Easter Day, but a good day anyway.

After running up to the store to pick up a few groceries for this week, I came back home and got most of my list done!

  • Groceries – check!
  • Laundry – check!
  • Cleaning – mostly check  :)
  • Cut up fruit for this week – check!
  • Pack lunch/snacks – will be done soon
  • Baking project – check! but I haven’t tasted it yet, so I’ll wait to post until I do.


Whew! No wonder I feel worn out! I’m glad we got back when we did, and I’m very thankful that it is staying lighter later now. Nick was able to cut the grass once we got home and finish that before it got dark. I like that it stays light later, but it’s also really tricky – I feel like it’s only 5 pm when it’s really 7 already!

While I was cutting up some fruit for this week, I snacked on some pineapple that wouldn’t fit in the container. Somebody had to do it.



Dinner tonight needed to be easy and fast, since we were both still working on stuff. I picked up a rotisserie chicken at the store and I guess I was supposed to buy it! I went up to get one and there was only ONE left – that’s a sign, right?



I cooked up some whole wheat orzo on the side with some sundried tomatoes, basil, and a little parmesan cheese, and quick steamed some broccoli in the microwave with some garlic seasoning.



I can’t believe tomorrow is Monday already – I’m not ready for my weekend to be over yet! Weekends always go by faster when you’re traveling, that’s for sure.

I hope you all had a great Easter, and I’ll see you for breakfast. I’m off to pack my lunch and watch a little Iron Chef before heading  to bed.



  1. ohhh…orzo! i love that stuff! i had it at WF not too long ago and it was cooked w/ spinach…yummers!
