Safe At Home

Hi everyone! Well, this has been a long day, but we made it safely to my parents and we’ve already got a little shopping time in :)

 

This morning just went by so fast and we were finishing packing, and running, and I just ended up with no time to post before we hit the road. I’m so happy to be here!

 

Nick and I had a great lazy morning breakfast this morning, which usually means –

eggs and grits

Some sliced apple, kiwi, and raspberries

Plus a cup of this awesome new coffee we got! It was the best coffee I’ve ever had.

Backtracking a bit: After we woke up and lounged around a little watching the news, we went for a run. I am so excited to say that this was probably my best run ever. I don’t know what it was, but I did not have ANY side stitches or bad pains or anything. It was awesome! I was able to really just enjoy being outside running – I’m hoping I have more of these days. I’m glad we went when we did, because it started raining not too long after we got back and it kept raining until we left town. We ran about 3.5 miles or so, then came back to take showers and eat breakfast.

After we ate, we finished packing up the car  before eating lunch.

I was pretty excited for lunch today! We had leftovers of our awesome burgers from last night.

I had my bison burger on an arnold thin, the last couple of grilled potatoes, and the last of the grilled zucchini and FINALLY the end of my broccoli and cauliflower. That stuff lasted me all week! And it was delicious every time I ate it.

We ate, washed the dishes and got on the road. Fast forward 6 or so hours, and we arrived just in time for dinner. And how did my mom know one of my favorite meals? Hmmm…

I had a big pile of:

  • refried beans
  • black beans
  • lean taco meat
  • lettuce
  • tomato
  •  guacamole
  • baked tortilla chips

I also had a little bit more beans/guac after this plate was gone.

Oh! and I had a banana in the car while we were on the road, but it’s so hard to get clear pictures while the car is moving!

After dinner, my mom, sister, and I headed over to Ross for a little shopping and then to Harris Teeter for a few things. I got a really cute top for $9 AND a running skirt for $6!!! I’m so excited about both of them.

Once we got back home, I was ready for something sweet. My parents have this Edy’s yogurt blend vanilla ice cream stuff, so I put about 1/2 cup of that in a bowl and topped it with some mini cookies and a little Hershey’s syrup.

  5. is it horrible that i’ve never had grits before? i feel like such a bad food blogger not having had them! same w/ brussel sprouts or rutabaga! haha!
