Snow? Seriously?

It is coming down right now! Nothing is sticking since it’s too warm for that (41 or so), but I can’t believe it is snowing! We just had this beautiful weekend of 60 degree weather and sunshine…come back, spring!

I loved reading all of the things you guys forget – at least I’m not the only one  :) I forget stuff all the time, so I have to write myself notes/post its to keep with me.

My afternoon snack included another package I got in the mail yesterday!

I won a MixMyGranola contest on Abbie’s  Foods That Fit last week and our granola showed up yesterday – I couldn’t wait to try mine. Since I decided on the muesli mix, I put 1/2 serving in some plain yogurt last night and let it sit in the fridge. This morning, before I left for work, I topped it with a few raspberries and then….waited until this afternoon to dig in  :)

You can kind of see one of the little chocolate chips in the top of that little yogurt mountain – I. loved. this. muesli! It was so good with the dried raspberries, chocolate chips, and all the goodness that just comes in the muesli mix itself. I can’t wait to try it with other fruits/yogurts/milk! I really like that you can get whatever you want in their mixes – I like most granola mixes, but it is nice to be able to actually make your own and have someone else put it together for you AND send it with the nutritional information and everything. Good job, MixMyGranola!

Nick made himself a granola, too, and his is really good. I’ll have pictures as soon as I have more than a pinch at a time :)

No running again today since it’s cold and snowy – boo. I hope I’ll get to run this weekend while I’m home! I’ll be taking my running stuff with me, just in case.

Dinner tonight was the leftover whole wheat pasta, sauce, and eggplant parmesan along with some of my leftover roasted broccoli and cauliflower.

Thank goodness for a super colorful dinner on this dreary day! This meal made me happy – looking at it AND eating it.

I didn’t want the eggplant to get soggy, so I heated it up in the toaster oven, which worked perfectly. I can’t wait to make this again.

I’m off for super exciting Tuesday night of folding laundry, catching up on blogs, and watching American Idol. Crazy night, right?  ;)

  5. Your dinner is beautiful. I’ve been wishing for a toaster oven for things like heating up leftovers, but there’s just no more room in my little kitchen! I’d have to get rid of the coffee pot… and that’s not likely to happen!!

    I hope the snow is melted. I’m ready for this winter business to be OVER!

  6. I just got my mix my granola in today- I named mine Fruity Muesli- yours looks yum! I am going to try mine tomorrow!
