said my back and neck at the chiropractor today. It felt so great! My back feels so much better – I wasn’t really hurting before, but I always feel so long and lean after leaving the chiropractor.
I was so excited for my snack today! I found the Oikos yogurts over the weekend and was able to use the coupons that Kristina sent me. Today I tried the Blueberry Flavor –
I have not had a flavored yogurt in a couple of years, but I think this was the best one I chould have chosen!

This was the perfect blend of sweet and tart. I’m definitely have to buy this one again! I normally don’t like flavored yogurts because they’re so sugary sweet, but I loved this because the blueberry part was sweet while the greek yogurt was still tart. Thanks again for the coupons Kristina!
I topped mine with some of TJ’s fruit and nut medley cereal.
We didn’t go running today – we were going to try to go after our chiropractor appointment, but the weather just wasn’t good enough. I’m hoping it will be better tomorrow because I want to use my HRM again :)
Our dinner tonight has been coming together in my head since Friday, and I’m glad it fulfilled my expectations!
I made Baked Eggplant Parmesan with Whole Wheat Angel Hair and Steamed Broccoli
For the eggplant, I sliced 1/2 a medium eggplant and dipped it in a mixture of fine ground cornmeal, soy parmesan, salt, and oregano. I baked it at 400 for 15 minutes, flipped them over, and baked for another 15 minutes.
The sauce is the last of the meat sauce I made last week, froze, and thawed out tonight.
This was so good! I’ve never made my own eggplant parm, and I wasn’t sure how it would turn out baked/not cooked in oil but we both really liked it.
I just finished a new baking project, but I haven’t tasted them yet so I’m waiting to do my review. They smell good, though! That’s a good sign :)
What’s your favorite way to eat eggplant?
I never really think to buy eggplant but I should get it more often! I really like it when I do have it, but eggplant parm is usually the only thing that comes to mind.

I haven’t tried the blueberry Oikos, just the vanilla which I LOVE! I have some of those coupons too so maybe I should branch out.
Your eggplant looks so great, that’s my favorite way to eat it. And your plate/bowl looks really similar to a set we have!

I tried a few recipes the other week with eggplant. I had it in a salad, on a wrap and in an omelette! I think on a wrap was my fav, but I want to try new ways next time! I just may do the parm!

i feel the same way about sweetened yogurts! i did go out on a limb and get some vanilla oikos with the coupons, but i didn’t like it alone, so i used it for more cream cheese icing :-) i should have gotten some blueberry, though! next time …
you did a phenomenal job with that eggplant! i made some sort of greek eggplant bake last year that i remember tasting delicious — i think it was a ww recipe, actually. i really like eggplant however it’s done … as long as it’s not underdone and chewy. that’s the worst!
