Does anyone else miss TGIF

Every Friday night from 8 pm – 10 pm, all the shows I grew up with were on in ONE night. Family Matters, Step by Step, Full House, Boy Meets World…sometimes I miss those TGIF nights of having dinner with my sisters and mom and making sure we were home in time to watch our shows  :)

 

It feels so good to know that tomorrow is Saturday and I don’t have to work! The weather is supposed to be nice, so I’m hoping for a good run or two this weekend – especially since my HRM came today!!! I can’t wait to use it! We didn’t get the GPS one (it’s $$$!), but we each got one that has the foot pod so it does tell you your distance, which is nice. We need to remember to drive our route to see how close it is on the mileage.

 

I am so happy I actually got hungry for my snack today – I’d been looking forward to this snack since yesterday.

I took this:

and crumbled it on some fat free plain yogurt with strawberries mixed in.

Yeah…it was just as good as I thought it would be  :)

 

Dinner was such a dramatic decision tonight! First I didn’t want to cook, but I didn’t know where I wanted to go eat. Then we decided to go out tomorrow night instead so we can go to a place we’ve been wanting to try. I had about 3 different things I could make for dinner, but just couldn’t decide. Eventually, I just turned the heat on under a pan and made my decision while it heated up.

Eggplant, Zucchini, and Chicken Curry

This made 3 servings for us.

  • 2 chicken breasts, diced
  • 2 zucchini, sliced
  • 1/2 eggplant, peeled and diced
  • 2 scallions, sliced
  • 1″ fresh ginger, diced
  • 2 tsp curry powder
  • 1 tsp ground coriander
  • salt
  • pepper
  1. Heat pan on medium heat.
  2. Add oil or spray, then add in chicken.
  3. Brown chicken and remove from pan.
  4. Add scallions, ginger and a splash of water or broth to deglaze the pan.
  5. Let cook for 1-2 minutes until ginger is fragrant.
  6. Add in zucchini and eggplant and cook until tender/browned.
  7. Add chicken back to pan and warm through.

We put ours on top of leftover couscous and topped with some plain yogurt, a sprinkle of ancho chili powder and a few peanuts.  This was really good, but I think the yogurt/chili powder made it! Both of those added such great flavors to this dish.

I’m glad I decided to make it tonight. Once I tasted it, I knew it was just what I wanted.

 

We just ran to Walmart to pick up a few things and are back relaxing and waiting for What Not to Wear to come on.

Did you watch TGIF? If not, what was your favorite show/movie when you were growing up?

I have to say….I LOVED Saved By The Bell. I still know the words to the theme song, and we actually watched an episode last weekend! I also loved Full House, Fresh Prince of Bel Air, Dinosaurs…too many, I guess :)

  1. I didn’t grow up here but everything I know about 1980s and early 1990s came from Boy Meets World!!! Sean was my first TV crush, he’s SO dreamy :)

    I used to watch dubbed versions of Full House in Ukraine too! hahah

  2. I miss TGIF SOOOOOOO much!!! I was little when that was on, and still remember it quite clearly. Clueless was my favorite show in the lineup! :-)

  7. omg, tgif, i used to love that!! i just started thinking back to the first tgif line-up i remember — Perfect Strangers, Full House, Mr. Belvedere, and Just the Ten of Us — so i looked it up to see when it was from. 1988-1989!! ummm, that’s 20 years ago???? where the heck did the time go?

  9. I am totally dating myself here, but my TGIF was Love Boat, Fantasy Island and Falcoln Crest – I am sure many of you don’t even know what Falcoln Crest was!

  10. TGIF! I remember!! my fav was boy meets world.
    Nice, fast, simple curry! I always put tomato in mine, though. I like the sweetness it brings. oh, and fresh prince! it still cracks me up to see that young version of will smith.

  11. LOVED TGIF!! My favorite show was full house but I was also a big fan of Saved by the Bell and that one with Fred Savage. I also always watched Punky Brewster after school :)

  12. Ohmigosh! I totally remember the line-up on Fridays! When I wake up in the morning they show old re-runs on ABC family and I watch while I run on my treadmill. Ahh, what a trip down memory lane. Do you remember California Dreams?

  14. I miss TGIF so much! It brings back such great memories :)

    I haven’t had ZBar + yogurt in so long, but it’s one of my favorites! I’ll have to bring it back!
