No Plans Are The Best Plans

No plans for me tonight – other than finishing up this document and watching The Office tonight.  It was nice to just come home and start right on dinner. It’s been raining all day, so we didn’t go running after work. Plus, my legs are still pretty sore from BodyPump yesterday -I don’t think I could run today if I wanted!

I brought a really good snack to work, but never got hungry for it this afternoon – I hate when my hunger does not happen when I want it to  :) I was looking forward to that snack -I guess it will be waiting for me tomorrow if I need it.

Dinner tonight was not even on my planned meals for this week, but since I switched up what I used the ham for last night, I decided to just make what I wanted.

Better-For-Us Diner Food – no butter or lard needed!

I made us each an omelette filled with mushrooms, scallions, leftover roasted asparagus, and leftover ham that I diced. Quesadilla cheese for him; cheddar for me.

What else to have with an omelette? I always want homefries or hashbrowns or whatever you want to call them. I made Joe & Betsy’s Crispy Kale and Potato Hash, but just cooked it all in a skillet (I didn’t transfer to the oven). I should try it the way it’s written – I’m just lazy if I don’t need the oven on for anything else  :)

I actually did pretty well getting the omelettes on the plate without them tearing! Each of ours had a teeny tiny tear in it, but not bad. I was pretty proud considering how stuffed they were!

The best part of my day? I got a fun package in the mail today!

Kristina, from Stonyfield Farm, sent me some coupons for Oikos and other Stonyfield yogurts, plus this cute reusable bag and the cutest cow card! Thanks so much, Kristina! I can’t wait to find some Oikos here – you can bet I’ll be looking for them this weekend. I’ve never tried them, but I’ve heard great things!

 

My crystal food ball is saying that popcorn and / or chocolate milk may happen in my future tonight  :)

    That breakfast for dinner you created looks extremely yummy ! I had an omelet today too but I didn’t get to try kale chips with ’em!! I’m still wondering what they taste like. hahaha…and I looove that you have no plans tonight because sometimes, that definitely IS the best plan!!!

  5. I wish I could send you a dozen fresh eggs from our chickens! don’t think they would travel well all the way from Oregon, lol. Once you eat fresh eggs, you won’t want to go back to store bought. The whites are thick and have a weighty body while the yolks are orange instead of yellow. Mighty good eatin :)

  7. no plans ARE the best plans. and what is your omelet trick, seriously?? every time i try to make an omelet, i end up turning it into a scrambled egg because i just can’t keep it together!
