Oops!

Yeah…..I totally forgot to blog last night!   :)

In my defense, I had a long day at work that felt like it would never end, then BodyPump that seemed longer than normal, we didn’t eat dinner until 8:30, and then LOST was on! And I can’t do anything else during LOST. And it was crazy, right? I was not expecting any of that to happen.

Body Pump was good, but it felt like every song was 10 minutes long tonight! I upped my weights on the chest, tricep, bicep, and back/hamstring tracks, so I’m gonna be feelin’ it today. I just honestly did not think the class was ever going to end last night!

I was so excited when I opened this package – I have been wanting to try these things ever since I heard about them!

Sarah sent me some her Jasmine Tea Biscotti Bites! and they are so good and crunchy and have such a great flavor. I told Nick he could try them, but I think I changed my mind after I had one last night! Thanks Sarah  :) This seriously made my day.

 

Dinner was another “winner, winner, chiken dinner”, but I was not in the cooking zone so it took me forever to make it.

Lemon-Artichoke Chicken, Roasted Veggies, and Whole Wheat Orzo with Sundried Tomatoes and Basil

I used the Lemon-Artichoke Chicken recipe out of the latest Clean Eating magazine, and we really liked it. I’m a big fan of artichokes, but forget to use them most of the time. I couldn’t find the recipe online, but I’ve made a bunch of recipes out this magazine, so it’s worth the cash. I should just get a subscription already, huh?

The roasted veggies had: red onion, asparagus, carrots, and cauliflower. Roast at 425 for about 30 minutes, stirring half way through the cooking time.

For the orzo, I just cooked 1 cup of whole wheat orzo and added some diced sundried tomatoes in the last minute to help soften them up. Drain, and stir in some salt and basil.

A nice and springy, light meal to counter balance the gloomy rainy day yesterday. One more shot from above, just because it asked:

  1. Great job at Body Pump, some days they do seem to drag on :) I don’t know if I was ever able to increase my weights on the bicep track when I took the classes…that one was always tough!

    Food looks great today! I love that Clean Eating magazing, I need to get a subscription already too.
