One of my recent baking projects was a Cinnamon Bread I saw on Heather’s blog. Um…this stuff tastes like a big cinnamon roll! I don’t know how I hadn’t made it before!
My modifications were:
- 2 cups whole wheat pastry flour
- 1.5 tsp baking powder
- 1 tsp baking soda
- 1 cup fat free buttermilk
- 1/2 cup maple syrup
- 1/4 cup chopped pecans
- 2.5 oz. cinnamon chips – the BEST part of the bread :)
Nick and I both loved this bread! It was so good still warm out of the oven – I can’t wait to try it on oatmeal :)
The best part of this bread? The entire house smelled like sweet cinnamon while it was baking….I already want to make it again just so I can have it warm right out of the oven!
The only thing that could possibly make this bread better is a bit of healthy icing…maybe that will happen the next time I make it :)

Wow, that bread looks great! I am so glad that you posted the recipe! I have never seen cinnamon chips before though, but I bet if I keep my eye out for them they’re probably right with the other baking chips…
I love foods and baked goods like this that make your house smell so good! I just burned some stovetop oats and my house reeks, so this would be a great way to get rid of that smell!

Your bread looks awesome. I need to try your version as mine ended up being a little too soft in the middle. I think I used too many cinnamon chips. Mmm, I forgot how good it smelled. Yep, I need to make this again soon. Thanks for the reminder.
Oh, and another thing that could possibly make your bread better? ALMOND BUTTER :)
