I am soooooo glad it’s Thursday and that the day is almost over. Today has been so long at work, more emails keep coming in – ah – it’s nonstop!!! I’m ready for a weekend.
The Hokie game last night went into double over time, so Nick and I missed most of LOST last night. I’m so glad ABC has the full episodes online! We watched it at lunch today- no eating outside since it’s cloudy/rainy today :(
Lunch was pretty good! Some more chicken barley chili
A wrap with some fat free cheese and hot sauce!
Some celery with a little ranch for dipping
and some cantaloupe / strawberries
This batch of strawberries I got the other night are awesome! They’re perfectly ripe and red inside :)
I found out today that I tied for 3rd place in the Great Peanut Butter Exhibition #5!!!
Since the contest is over, I guess I can reveal the recipe I sent in! Man, was it good :)
Cinna-Spiced Chicken PB Wrap
Now, I did use leftover chicken for this, but you could definitely do this any day of the week!
- Wrap/tortilla of choice
- crunchy peanut butter
- about 1/4 – 1/2 cup mashed sweet potato
- cinnamon
- cayenne
- salt
- bbq chicken (or tofu, or just regular chicken and use bbq sauce, too)
- sliced apple
Spread a healthy amount (i.e., however much you want) of peanut butter on wrap.
Spread sweet potato on top of pb.
Sprinkle with salt, cinnamon and cayenne.
Top with chicken/tofu/whatever protein you want. I used leftover grilled bbq chicken.
Top with some thin apple slices.
Wrap, heat, and eat!

Thanks to everyone for your comments and support for my mom. I talked to her at lunch and they’ve done the stress test, so they’re just waiting for the results. She was watching Barefoot Contessa and eating a not-so-yummy hospital lunch. All your comments meant a lot to me!
