Egg Remix!

Spinning was – – – – – great, but my thighs were killing me!!!

Before I left work, I got to try my first ever Clif bar, thanks to Lindsay:)  I know…I’m so behind the times.

I knew I needed some fuel to get through the class, and this was the perfect thing.clif

 

First Impression: As soon as I opened the package, all I smelled was chocolate! And not that fake chocolate smell – it really smelled like a chocolate chip cookie!

You know that’s gotta be good! I really enjoyed this bar – it was very chewy and had lots of little chocolate chunks in it. I wasn’t sure how the flavor would be before I opened it, but I was happily surprised! It wasn’t too sweet, but it didn’t have that weird “protein bar” taste, either. Thanks Lindsay!!!

So, spinning was awesome. I really, really like it. My butt was still a little sore from my class on Sunday, but I did okay.

The best part of this class tonight? the music. The guy teaching this class was playing some of my favorites: DMB, The Killers, etc. This one was only 45 minutes, too, but it seemed like the perfect length. I do think I need some tighter shorts, though. I was wearing some running shorts, and my inner thighs was rubbing on the seat when we were doing sitting sprints and that was not fun. I guess I need to wear stuff that fits tighter on my legs.  *Note to self for next time.

 

Dinner was great….I am loving the longer days already. We got home around 7 pm and it was still light outside, so we opened all the windows to let the breeze in. I can’t wait to start grilling every night again.

I am calling this the Bacon-terranean Frittata, served with Crispy Kale and Potato Hash and sliced apple

This was so easy to make – I am loving frittatas. You can make them with anything in the fridge!

Bacon-terranean Frittata

  • 1 slice bacon, diced
  • 1/4 red onion, diced
  • 4 eggs
  • 1 cup egg whites
  • 2 tomatoes, diced
  • 10 or so black olives, sliced
  • 2 Tbsp fat free feta
  • oregano
  • salt
  • pepper
  1. Cook bacon in pan until it starts to brown and crisp.
  2. Add in onion and let cook with bacon until bacon is done.
  3. Mix all the remaining ingredients together in bowl and pour over bacon/onion mixture.
  4. Let cook 5 minutes on medium heat, then cover pan with lid and let cook until top is set.
  5. Cut and serve!

This was a great flavor to do for today. With the weather all nice and springy, I loved the lightness of this frittata.

Joe & Betsy’s kale and potato hash was great, too! I didn’t transfer it to the oven tonight; I just started that in a big pot before I started the frittata and let it finish cooking while the frittata set.

Breakfast for dinner? Always a good idea. my belly is happy  :)

My favorites – Incubus, 311, Jason Mraz (if you can get copies of his old coffee house shows – they’re amazing!), All American Rejects, Limbeck, DMB, Jack Johnson, Ben Harper….I could go on. I love good music and love concerts.

    311 is one of my all time favorite bands! also Radiohead, Elliott Smith (+ lots of deceased woe-is-me dude singers, hehe)

  4. Rise Against, TOOL, and Primus are always in the disc changer in my car. I’m also an old raver girl so I like to listen to technoish stuff when I run or drive (usually DJ SHadow or Pendulum but thats because I can’t figure out how to get new music on my iPod-long story). And I like Hip Hop (not rap) like Atmosphere (used to see them all the time before they got huge)…I also like older stuff like the Grateful Dead, the Doors, Hendrix…ok I could go on forever with this so I’ll stop now. Pretty much most stuff but not R&B, country, or some pop…

    I like 311 and they always remind me of this boy I reaaaaally liked in 7th grade or so ;)

    That frittata is awesome! I love bacon, black olives and feta – and pretty much everything else you put in there! So obviously, I need to make that! I love the big serving, too – volume!!

    I can’t wait to see your breakfast! As for favorite bands…definitely too many to count, but among them are Maroon 5, Jason Mraz, John Mayer…

  7. Clif bars rule! Try the chocolate brownie flavor – I don’t think you’ll be dissappointed!

    My favorite bands are Our Lady Peace and Blink 182…so glad they are getting back together!

  8. I love spinning classes. In my opinion it is one of the best cardio workouts and is a great bang for the buck so to say. In a 45 minute class I burn more calories than I would running!

    It depends so much on the instructor though and the music they choose!

    The chocolate chip Clif bar is a classic in my mind and you can’t go wrong with it! Have you tried the White Chocolate Macadamia Nut??? That is so good!

    • I have NOT seen the White Choc. Macadamia one here yet – I’ve been looking for it, though! :)

  12. Don’t worry; you’re not too behind the times! I just tried my first Clif bar about a month ago too! Good thing they have lots of flavors, because I really like em’! You should definitely try the Carrot Cake flavor if you can get your hands on one! Have a super Thursday!
