Our IT guy got my computer back up and running at 4:55 pm today – I’m glad everything is there that I need! I couldn’t really do anything but check my email, so it was a very long day.
Lunch today was really good – I’ve been planning this since Saturday!
Leftover BBQ Tofu and Brown Rice in a FlatOut Wrap, Steamed Broccoli, and an apple
I brought a few snacks for today: one of my winning scones (woohoo!), celery and some ranch dressing, and a green smoothie. I ended up not having any of them because I was working with our IT guy most of the day. I was pretty hungry when I finally left work, but I didn’t want to eat anything right before we went running, so I didn’t.
I ran for 28 minutes, and it was probably close to 3 miles, but it was painful as always, it seems. I had side stitches most of the run, like normal. I honestly just don’t know what else to try. I don’t know if I should keep going anyways or just stop. I love running – the act of running, how I feel with the wind blowing at my back, the feeling of my legs moving underneath me, the serene feeling after…but it doesn’t seem to be getting any better. It just feels like someone is stabbing me in my abdomen most of the time, which is not pleasant. Sorry for all the whining about this – I just don’t know what to do and I’m just frustrated.
Dinner tonight was a nice summery meal – I’m ready for this warmer weather to stick around!
Grilled Chicken, Cindy’s “Baked” Beans, Steamed Corn
Nick’s mom makes these really good beans and this is my version.
Cindy’s Baked Beans
- 1 can kidney beans, drained and rinsed
- 1 can chili beans
- 1 can green beans, drained
- 1 can tomato sauce
- 1 Tbsp bbq sauce
- 1 Tbsp mustard of your choice
- pinch cayenne
- garlic powder
- splash of apple cider vinegar (about 1 Tbsp)
- 1 Tbsp Worchestershire sauce
I just dumped everything in a pot and let it simmer until the chicken was ready. Cindy usually also adds liquid smoke (I didn’t have any) and bakes them in the oven until hot and bubbly. These are so good, you can tweak the sauce however you want, and I like that the green beans give a non-starchy dimension to the dish.
I also made some of Tina’s cookies tonight!
I used fat free skim milk instead of the soy, and omitted the nuts…and may have added a few extra chocolate chips to make up for it :)
I’m having lunch with 2 ladies I work with tomorrow, and I am in charge of fruit (grapes and oranges prepped and ready) and healthy cookies since it’s one of the ladies’ birthday tomorrow. They turned out SO good! I’m definitely going to be making these in the future :)
