Running Makes It Better

I feel so much better! Even with the bad night of sleep, my stomach is feeling 100% better now, thank goodness! I have so much to do today and no time to be sick :)  Thank you all so much for your notes – they made me feel better, too  :)

When I got home from church, I set out on a run. Today is beautiful – 72 degrees, a little breezy – so I knew I needed to go as soon as I got home or it wouldn’t happen. I left the house in my new running outfit that I’ve been waiting to wear (it’s been too cold lately) and my mp3 player and wasn’t really planning on where I was going to run or how long – I just went. I did still have some bad cramping today, but I tried to just run through it. I guess I need to research this some more and see what else to try. It doesn’t seem to matter if I eat something before, if I don’t, if I drink anything before or not….it seems that I just get cramps at some point every time I run, period.

I stopped and just jogged in place 3 different times (because the cramps were too much), for a total of about 2 minutes while I was out. Since I just use a stop watch to see how long I’ve gone, I stopped the time from ticking when I took a short break so I would know how much time I actually ran when I got back.

The Bad? I still had pretty bad cramps, which apparently is just normal for me.

The Good? I ran for 46.5 minutes AND (according to MapMyRun.com), I ran 4.71 miles which is PDR for me!  While this was a PPR (personal pain record), I’m more excited about the PDR. I’m hoping to run a 10K this summer, and this is the farthest I’ve run, which is super exciting.

Sometimes when I have these bad cramps while running, I just wish it was over, but the feeling after I finish always makes up for it.

Lunch today needed to be easy, and it was!

Baked Tofu, Brown Rice Medley, Steamed Broccoli

tofu

I made a quick drenching for the tofu with

  • 1/4 cup ketchup
  • 1 tsp spicy mustard
  • 1 tsp bbq sauce
  • 1 tsp Worchestershire sauce
  • 1 tsp apple cider vinegar
  • garlic powder
  • pinch cayenne

Baked at 425 for about 30 minutes while I started the last load of laundry.

Then I just heated up some of my leftover brown rice/black bean/salsa/pineapple mix and some leftover broccoli. I had about 1/3 block of the tofu and am saving the rest for some lunches this week  :)

Bread Experiment Update!

Today is 2 weeks exactly since I baked the bread and bought the comparison loaf.

Surprisingly, nothing really happened until a few days ago. Nick opened up each ziploc bag a few days ago to give the bread some air for a few minutes and then closed them again.

Yesterday, I noticed this:

brd

Can you see those little white spots in the corner?

I noticed more on the rest of the loaf – I don’t think the last 1/4 of the loaf on the counter was as air safe in the plastic wrap as this slice was in the ziploc bag.

Still, for it to last 2 weeks before any changes happened is pretty good for homemade bread. That also means that it needs to be kept pretty air-safe to last this long. The store bought slice? Still no changes :)

I’ve still got a big to-do list today, but it should be pretty easy to get done once I get started:

  • Clean the house
  • Finish up laundry
  • BSI recipe  :)
  • Bake new loaf of bread
  • Prep stuff for lunches
  • Start on dinner at some point!

Enjoy your afternoon! I can’t wait to post the BSI recipe!
