Basil BSI + Baking + Dinner

I have been running around like crazy today! I’m so happy I got everything done on my list – the only thing left is to watch Iron Chef, probably with a  big glass of chocolate milk, since that’s all I can think about right now.

 

First things first. I was SO excited to try out this BSI recipe….I had no idea how it was going to come out, or if it would come out at all.

Basil and Strawberry Scones – Makes 8-10 (I got 9 out of the recipe, but one is really big!) *Based off of this recipe

  • 2 cups whole wheat flour
  • 1 Tbsp baking powder
  • 1/2 tsp salt
  • 2 Tbsp sugar
  • 1 Tbsp canola oil
  • 3 egg whites
  • 1/2 cup fat free plain yogurt
  • 1/4 cup fat free milk
  • 4 Tbsp fresh basil, ripped or cut into small pieces
  • 3/4 cup fresh strawberries, chopped
  • 1 Tbsp fresh orange zest
  1. In large bowl, mix flour, baking powder, salt, and sugar together.
  2. Drizzle in oil.
  3. Mix in egg whites, yogurt, and milk until the dough comes together.
  4. Stir in basil, strawberries, and zest.
  5. Drop onto parchment lined baking sheet and bake at 400 for 15 minutes.

These are so good! The orange zest is definitely what pulls these together, but I love the flavor of the fresh strawberries and summery basil together. What a perfect thing to make on this beautiful day!

When I told Nick this was my BSI idea, he wasn’t too sure about it. But I think he changed his mind once he tasted one. He did suggest sprinkling a little sugar over the top (which I forgot to do!), so I did that while they were still warm.

I love how summery they are, but I also love that they look like Christmas!

In other baking news, I also made a new loaf of bread for this week – and hey, this one actually looks like a loaf! :)

I used Zesty’s Quick and Easy Whole Wheat Bread recipe, but cut the molasses to 2 Tbsp and only used 4 cups of flour, now that I think about it. It definitely looks more like a loaf than the last try!

All in all, it was a great baking day.

 

Dinner tonight was nice and easy AND we were able to grill!

I had Nick grill a whole beef tenderloin for us, along with a salad with romaine, black olives, tomato, ff feta (and my dressing from the other night) and a slice of the bread.

I’m still so tired from a bad night’s sleep, but I am loving the longer days already! I’m ready for Spring – cute dresses and skirts, sandals, more running, more smoothies….

What’s your favorite season?

My favorite season is actually fall – the leaves change to reds/oranges/yellows, it’s football season!, and it’s chilly, but not too cold. I guess my second favorite would be Spring – I love everything turning green again, flowers blooming, and the days slowly warming up.
