Yoga Challenge Day #1

Is anyone else doing Tina’s yoga challenge for March? I have to say, it was nice to get up this morning, put my contacts in, and do 20 minutes of yoga before really starting the rest of my day. I know tomorrow may be different because I’ll have to get up pretty early to do it before work. I think I’m ready for the challenge though! I’ve downloaded some of the free podcasts from yogadownload.com and yogajournal.com and printed out pose guides for most of those as well. I know some of the poses by name, but not many, so I think the pose guides will be really helpful.

I’ve also been looking for some yoga to do in the office – have you tried any good ones? I thought that would be a good thing to have on stressful days at work and for days that I don’t get up early enough and possibly have busy evenings.

 

Breakfast today is one of our typical Sunday breakfasts. We like having this on the weekends since we usually have more time to cook and eat.

Since I promised a recipe for that couscous dish, I thought I would go ahead and give it to you now. Because the fellowship is right after church, my “lunchtime” post won’t be until later and I won’t have pictures. It’s a fellowship/meeting at the church, so I don’t think I’ll be taking my camera.

I made one batch for the fellowship and one batch for us for lunches this week – I already can’t wait to eat it  :)

Whole Wheat Couscous Veggie Salad

  • 1 cup whole wheat couscous
  • 2 cups water or broth
  • 1 can chickpeas, drained and rinsed
  • 1 -2 tomatoes, chopped
  • 1/2 can black olives, sliced
  • parsley
  • garlic powder (or fresh)
  • 1 Tbsp red wine vinegar
  • 2 Tbsp lemon juice

Bring the water/broth to a boil, stir in couscous, cover pot and take off the heat. Let it sit for 5 minutes, then fluff couscous with a fork. Stir everything together with the couscous.

 

This is great hot, warm temperature, or cold. It’s really good to take for potlucks/picnics because it doesn’t have to be refrigerated. Plus, you can pretty add whatever you want to this dish and it will always be good  :)

  1. I do yoga daily regardless, so I guess you could say that I started the challenge before it began (and will be continuing it past the 31 days, haha :-D ). Good luck and have fun with it!!

  4. Hoooray for the yoga challenge. Daily yoga is one of my goals outside of this challenge but I am hoping this challenge gets me kick started in doing it!
