A Berry Good Breakfast

Good morning!

It feels like it should be later than Tuesday, right? Yesterday seemed like the longest day at work – I hope today goes by faster.

 

Breakfast today really makes me want spring and summer to hurry up already!

 

Berry Bananza Oatmeal

  • 1/2 cup oats, 1 cup water, pinch salt
  • 1/2 banana, sliced
  • 3 big strawberries
  • palmful blueberries and raspberries
  • 2 Tbsp walnuts
  • cinnamon!

Since my stomach was growling all morning, I decided to have a hard boiled egg for some extra protein with breakfast.

And a cup of milk

    My favorite spring or summer breakfast is cereal. I like something a little lighter as it gets warmer outside (which can’t come soon enough!!!).

    I tend to go through phases no matter what the weather is but I do love adding fresh berries to my oats/cereal in the summer!

  6. Hey! Just curious about the soup you made yesterday (looks DELICIOUS!) how long did it simmer for?

    • Hi Angela! I let it simmer about an hour – I got everything in/simmering, then did my yoga, and it was pretty much done when I came back up.

    When it gets nicer and warmer I tend to go for cold breakfasts, so cold cereal and fruit, yogurt parfaits, bars, smoothies, etc.

  10. It feels like it should be Thursday to me!

    I stick to my oats for the most part in the warm months but will often make them “cold” with non-fat yogurt and do more of a muesli deal.
