Interview + Lunch

Well, I guess lunch + interview!

Lunch – not so appealing on the eyes, but very appealing on the taste.

Some leftover barley topped with the last serving of my kale/lentil soup (I froze the rest) and a veggie burger for a little more protein.

So, Mara from I Made Dinner randomly chose me as one of her people to interview next! I was waiting for someone to pick me – apparently, most of those random number-picking tools never like my number  :)

Here are the questions she sent me:

1.) What’s your favorite thing about blogging?

My favorite thing so far is meeting so many people! I love finding others that have the same passions and interests, and it’s so fun to get a glimpse into people’s lives through their food, recipes, and other randomness. I also have noticed one thing that I didn’t expect – I’ve become more creative with my meals because I plan on posting them. Yes, we still eat a lot of leftovers, but I try to find different ways to use some of them so I don’t have the same exact pictures for days on end  ☺

2) What’s your absolute favorite splurge meal?

Anything from The Bank. It’s this amazing restaurant here, and we definitely splurge whenever we go. We usually have to save up $ and plan on it, but everything we’ve tried is seriously amazing. I will definitely do a review on here of the restaurant, but I don’t know when we’ll go next! Everything is delicious and beautiful, and they serve the perfect portions – I can have a salad, meal, and dessert and not walk away stuffed to the gills.

3) Where’d you learn to love that which you blog about?

Hmm..this is a hard one to answer. I think food is such a strange topic to blog about, even though that’s what I do most of the time.

I love food. I eat it everyday, and since I have to eat, I think I should enjoy what I’m eating as much as possible. Learning more about healthy foods and eating came from following Core on WW (now called Simply Filling) – before starting that 4 years ago, I never knew what bulgur or wheatberries were, and now I love them! I’m also just super interested in health topics, food, and recipes and read a lot of that information on my own – you know, during free time – when I have some! A lot of my interest in health issues, food, etc., has really developed over the past 2 years while dealing with so many health issues in my family. That has motivated me to learn more and do more in regards to my overall health.

4) If you could have dinner with any person, living or dead, who would it be and why?

Ah…another hard question, Mara!

I’m sure my answer to this question could change every few months, but right now, I would love to have a meal with one of my best friends, Marques. He died, along with his mother, in a car accident almost 10 years ago. I would just like to talk to him, hug him, and see how he thinks I’m doing. He was an amazing person that always had high hopes for not just me, but for my entire family, who loved him dearly. Losing him is still one of the hardest things I’ve ever had to go through.

5) What’s one thing you’ve done that you NEVER thought you’d do?

Start a blog!  ☺ Especially a blog about food and recipes!

I honestly never cooked what I consider a “real meal” until I got married almost 5 years ago, so to have a blog about what we’re eating and posting pictures and recipes is still so surreal to me some days. To prove my point, I really do remember the first ever meal Nick and I cooked together – it was a mushroom pasta dish, actually. I should make it again! Before that (at home and in college), I ate a lot of microwave meals and the main things I “made” were grilled cheese sandwiches, mac’n’cheese from a box, etc.

So, you can see why having a food/healthy living blog is so strange yet exciting for me. I never really followed any blogs or even knew there such a thing as food blogs and healthy living blogs until last year! But I am loving it.
