I took out a can of pineapple chunks in juice last night to remind myself of what I’m making for dinner tonight :)
Of course, once I saw the can this morning, I knew I had to have some in my oats.
Yes, it’s pretty much dessert for breakfast, but this combination was SO good.
This bowl had:
- 1/2 cup oats
- 1 cup water
- pinch salt
- cinnamon!
- about 1 cup pineapple chunks
- 2 Tbsp total of almonds and walnuts
- 1 tsp brown sugar
- 1 Tbsp unsweetened coconut
- cherry on top!
Look how that brown sugar is melting into the oatmeal!!!
This was SO good! It will definitely be on rotation now when I have pineapple!
Alright – I’m off to have some coffee and get crackin’ – see you after lunch!

Gorgeous oats!
Pineapple in oats = major goodness.
i don’t know if i could do pineapple upside down oats! I always always always eat banana pumpkin, and I just don’t think I could switch!!! I adore pineapple but can’t stand it warm either. Are you a pineapple on pizza kind of person? Because I HATE it. haha…they sure are pretty though!!!!!!!

Yeah….I do like pineapple on pizza! ha :) Not all the time, but I do enjoy it.
I don’t cook the pineapple IN the oats, though. I usually have it in the fridge, and I stir the pineapple in at the end so it cools the oatmeal down enough to eat right away!

Growing up, I thought the ONLY way to eat oatmeal was with a heaping of brown sugar. Although I still love that topping, it’s fun to mix things up a little bit more. This is like the best of both worlds!
