Leftover Remix

I’ll go ahead and say this: We eat a lot of leftovers. It’s just two of us, and I actually love having leftovers if the meal is good – it makes for quick dinners on busy nights, but I do try to have at least 4-5 different meals per week, not including if we go out to eat.

 

Just a warning in case you see a lot of similar pictures in the future  :)

 

No lunch today!  Breakfast was pretty late (around 10:30 or 11 by the time we ate), so neither one of us was really hungry for lunch.

 

We did go see the movie Defiance, which was amazing. I really hadn’t heard anything about this movie at all, but it was one of the best movies I have ever seen! It’s based on a true story from WWII – I won’t ruin the story, but if you have the chance to see it, I would definitely recommend it.

 

Dinner was leftovers in a little different format than last night.

After seeing Meghann and Caitlin‘s wraps this week, I knew I needed to put one together for dinner.

 

My wrap had:

  • La Tortilla whole wheat tortilla
  • smear of fat free refried beans
  • Chipotle shrimp from last night
  • romaine

 

Instead of having everything on a salad, I just added a salad of more beans, romaine, tomato, and avocado to the side for more veggies. You know it’s a good dinner when it’s good the second time  :)

 

We’re just hanging out on the couch right now, trying to keep warm on this cold night. I may have some popcorn drizzled with olive oil in a bit…you never know.

  2. I love leftovers – my hubby, not so much!

    I try to buy meats that I can use differently later in the week – like tonight, I am making roast beef, mashed potatoes and green beans, which will be roast beef sandwiches with horseradish sauce and arugula later in the week.
